Egg Frittata with Asparagus Prosciutto and Prawns

Eggs are rich in protein and full of vitamins. The addition of vegetables, prawns and prosciutto makes this a rich and healthy meal. It's perfect served hot or cold.

8 eggs

1 bunch of asparagus

200g prosciutto
-
10 prawns
-
100g cherry tomato
-
200g pecorino
-
100g ricotta cheese
-
1 red pepper chopped
-
1 red onion chopped

Olive oil

Salt
-
Pepper
-
Parsley
-
Basil

Mint

Preheat the oven at 200°C
-
Greaseproof the oven dish with olive oil to avoid the frittata from sticking.

Crack the eggs into a bowl and whisk them together seasoning with salt and pepper.

Add half of the grated pecorino cheese and chopped aromatic herbs into the eggs and mix them together.

Pour the egg mixture into the oven dish and add the vegetables and grate the remaining cheese over the top.

Add the ricotta all around and place the prawns on top.

Bake the frittata for 20-25 minutes until it’s piping hot throughout.

Serve with salad or with some prosciutto.
Perfect served hot or cold.
