Marinated Cantaloupe Melon with Sweet Ricotta Cheese

A delicious combination of melon with ricotta cheese. Simple to make and a beautiful dish, bringing sunshine to your table.
INGREDIENTS

1 cantaloupe melon

400gr Sardinian sheep ricotta cheese

150gr caster sugar

2 oranges
-
40ml balsamic vinegar

Mint
-
Slice the melon removing pits and skin

Marinate the melon for at least half an hour with balsamic vinegar and mint

In the meantime, in a bowl whisk the ricotta with sugar and the juice of an orange
-
Place the melon slices on a serving plate, spoon the ricotta mixture over the slices and around the plate and garnish with the zest of one orange and the mint leaves.
